In over two decades of working in professional kitchens, I’ve never trusted my precious Japanese hand made knives to anyone to sharpen and always gone about the task myself.

I came across Kevin @ BladeTech and after reviewing his process and liking what I saw, I figured I would give him a go.

Kevin takes a meticulous approach to each knife’s shape, length, steel hardness, purpose, and current condition. One element that is vital to me was sharpening my blades to their true angle, which varies between the many blades in my kit. Digitally measuring and checking each blades bevel angel and adjusting his process to each knife – this is what drew me to him, not the usual one angle suits all approach. His whetstones move slowly and accurately, an approach that takes time, effort and discipline and he constantly checks the process with a professional jewellers loupe.

The results speak for themselves. Razor-sharp mirror-finished edges and my knifes returned to better than new sharpness.
